In the 400-year-old Alpine hut of the Appenzeller folklore museum in Stein, groups of two to about 30 people can have their self-made cheese as they did in the past. They help you make the cheese in copper vats over the wood fire. Mutschli matures over eight weeks before we send it to you.

First you will produce your own cheese in the Appenzeller folklore museum chalet hut, and then you will be able to satisfy your hunger in Höckli at the Appenzeller cheese factory with self-made, original Appenzeller Chäshörnli (macaroni cheese): including self-made cheese in the quaint alpine hut, admission, cheese shop, cheese factory salad, Chäshörnli us em Chessi [cheese speciality] and apple sauce.

Make your own cheese without a tour

Take part in cheese production, help, stir, taste the whey and the cream cheese.

Details

At the time of your arrival, the cheese maker prepares the milk up to the thickening time. Then, the exciting part of cheese making begins. This part takes about 1 hour. The guests stir, taste the whey and the cream cheese. When the cheese is in the moulds, it is possible to make your own cheese labels. The maturing time of the cheese is about 8 weeks. As soon as your Mutschli has developed its full aroma, it will be sent to you by post.

In the morning, enjoy an individual journey through Maestranis Chocolate Factory of Luck. Discover the live production and eat a lot of chocolate. In the Appenzellerland, traditions are still practised with pride. Appenzeller qualities are proven and given to you: First, at the cheese factory, where you prepare Appenzeller Chäshörnli (macaroni cheese) in a team, which is a real feast with apple sauce and cheese.
So fortify yourself with the handwork. Under the supervision of the master baker, you will make your own delicious Biber. And while the sweet speciality turns golden brown in the oven, move on to the master cooper.
